  • 6 cups chicken broth
  • 1 cup cooked shredded chicken
  • 1/2 cup rice (or orzo)
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • Salt and black pepper, to taste
  • Optional: fresh dill or parsley for garnish

  1. Cook rice: In a large pot, bring chicken broth to a boil. Add rice and cook 10–12 minutes until tender.
  2. Add chicken: Stir in shredded chicken and simmer for 5 minutes.
  3. Prepare egg-lemon mixture: In a bowl, whisk eggs and lemon juice until smooth.
  4. Temper eggs: Slowly ladle 1–2 cups of hot broth into the egg mixture, whisking constantly to prevent curdling.
  5. Combine: Gradually stir the tempered mixture back into the soup. Heat gently without boiling.
  6. Season & serve: Add salt and pepper to taste. Garnish with herbs and serve warm.

Notes

Do not boil the soup after adding the egg mixture, as it may curdle. Adjust lemon juice for your preferred level of tanginess.
