- 2 lbs beef stew meat, cut into cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups beef broth
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- 1/2 tsp black pepper
- Salt to taste
- 1 cup orzo pasta
- 1/2 cup grated Kefalotyri or Parmesan cheese
- Fresh parsley for garnish

- Preheat oven to 325°F / 160°C.
- Heat olive oil in a large Dutch oven or ovenproof pot over medium-high heat. Brown beef on all sides. Remove and set aside.
- Add onion and garlic to the pot and sauté until softened, 3–4 minutes.
- Stir in crushed tomatoes, beef broth, oregano, cinnamon, salt, and pepper.
- Return beef to the pot. Bring to a simmer, then cover and transfer to the oven. Braise for 2–2.5 hours until beef is tender.
- Remove pot from oven. Stir in orzo pasta, making sure pasta is submerged in sauce.
- Return to oven, uncovered, and bake 20–25 minutes until orzo is tender and sauce is slightly thickened.
- Sprinkle with cheese and parsley before serving.
Notes
For extra depth, add a splash of red wine when deglazing. Kefalotyri cheese gives authentic Greek flavor, but Parmesan works too. Leftovers taste even better the next day.
