Description

  • 2 lbs beef stew meat, cut into cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • 1/2 tsp black pepper
  • Salt to taste
  • 1 cup orzo pasta
  • 1/2 cup grated Kefalotyri or Parmesan cheese
  • Fresh parsley for garnish

  1. Preheat oven to 325°F / 160°C.
  2. Heat olive oil in a large Dutch oven or ovenproof pot over medium-high heat. Brown beef on all sides. Remove and set aside.
  3. Add onion and garlic to the pot and sauté until softened, 3–4 minutes.
  4. Stir in crushed tomatoes, beef broth, oregano, cinnamon, salt, and pepper.
  5. Return beef to the pot. Bring to a simmer, then cover and transfer to the oven. Braise for 2–2.5 hours until beef is tender.
  6. Remove pot from oven. Stir in orzo pasta, making sure pasta is submerged in sauce.
  7. Return to oven, uncovered, and bake 20–25 minutes until orzo is tender and sauce is slightly thickened.
  8. Sprinkle with cheese and parsley before serving.

Notes

For extra depth, add a splash of red wine when deglazing. Kefalotyri cheese gives authentic Greek flavor, but Parmesan works too. Leftovers taste even better the next day.
