Description

Beef Giouvetsi is a classic Greek comfort dish made with tender braised beef simmered in a rich tomato sauce and baked with orzo pasta. Hearty, cozy, and full of Mediterranean flavor.

  • 2 lbs beef chuck, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 can (14.5 oz) crushed tomatoes
  • 3 cups beef broth
  • 1 cup dry red wine or extra beef broth
  • 1 tsp ground cinnamon
  • 1 tsp dried oregano
  • 1/2 tsp allspice
  • Salt and black pepper, to taste
  • 1 1/2 cups orzo pasta
  • Grated Kefalotyri or Parmesan cheese, for serving

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef on all sides.
  2. Add onion and cook until softened. Stir in garlic and tomato paste and cook 1 minute.
  3. Add crushed tomatoes, beef broth, wine, cinnamon, oregano, allspice, salt, and pepper.
  4. Bring to a simmer, cover, and cook on low for 1 1/2–2 hours until beef is tender.
  5. Preheat oven to 375°F (190°C).
  6. Stir in orzo and transfer mixture to a baking dish.
  7. Bake uncovered for 25–30 minutes, stirring once, until orzo is tender and sauce is thickened.
  8. Rest 10 minutes before serving. Top with grated cheese.

Notes

Giouvetsi can also be made with lamb or chicken. If the dish thickens too much while baking, stir in a little extra warm broth before serving.
