  • 1 lb ground turkey
  • 1 cup dry orzo pasta
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 cups chicken broth
  • 1 (14 oz) can crushed tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

  1. Cook turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned.
  2. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds.
  3. Add liquids: Pour in crushed tomatoes and chicken broth. Stir to combine.
  4. Add orzo, Italian seasoning, paprika, salt, and pepper.
  5. Bring to a simmer, cover, and cook 10–12 minutes, stirring occasionally until orzo is tender.
  6. Finish: Stir in Parmesan cheese until creamy.
  7. Garnish with parsley and serve warm.

Notes

Add spinach or zucchini for extra vegetables. For a creamier version, stir in 2 tablespoons of cream at the end. Leftovers reheat well with a splash of broth.
