  • 1 lb ground turkey
  • 1 cup orzo pasta
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 2 cups chicken or vegetable broth
  • 1 cup chopped spinach or kale
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Optional: grated Parmesan cheese for serving

  1. Heat olive oil in a large skillet or saucepan over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks.
  2. Add onion and garlic and sauté 2–3 minutes until softened.
  3. Stir in orzo, diced tomatoes, oregano, salt, and pepper.
  4. Pour in chicken broth, bring to a boil, then reduce heat to simmer. Cover and cook 10–12 minutes until orzo is tender and liquid is mostly absorbed.
  5. Stir in chopped spinach or kale and cook 1–2 minutes until wilted.
  6. Serve hot, topped with grated Parmesan if desired.

Notes

You can add other vegetables like bell peppers or zucchini for extra nutrition. For a creamier version, stir in 1/4 cup of cream or Greek yogurt before serving.
