- 1 cup orzo pasta
- 1 small onion, diced

- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Optional: grated Parmesan cheese for serving

- Add onion and garlic and sauté 2–3 minutes until softened.
- Stir in orzo, diced tomatoes, oregano, salt, and pepper.
- Pour in chicken broth, bring to a boil, then reduce heat to simmer. Cover and cook 10–12 minutes until orzo is tender and liquid is mostly absorbed.
- Stir in chopped spinach or kale and cook 1–2 minutes until wilted.
- Serve hot, topped with grated Parmesan if desired.
Notes
You can add other vegetables like bell peppers or zucchini for extra nutrition. For a creamier version, stir in 1/4 cup of cream or Greek yogurt before serving.
