  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup beef stock
  • 1/2 cup stout beer (optional)
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 sheet puff pastry (enough to cover pie)
  • 1 egg, beaten (for egg wash)

  1. Preheat oven to 400°F (200°C).
  2. Heat oil in a large skillet over medium-high heat. Brown beef in batches and set aside.
  3. Add onions, carrots, and celery to the skillet and cook until softened.
  4. Add garlic and cook 1 minute until fragrant.
  5. Sprinkle flour over the vegetables, stir to coat, and cook for 1–2 minutes.
  6. Gradually add beef stock and stout beer, stirring until thickened.
  7. Return beef to the skillet, add thyme, salt, and pepper. Simmer for 10–15 minutes until gravy thickens slightly.
  8. Transfer the beef and vegetable mixture to a pie dish. Cover with puff pastry, trimming excess and pressing edges to seal.
  9. Brush pastry with beaten egg.
  10. Bake for 25–30 minutes, or until pastry is golden brown and puffed.
  11. Serve hot with mashed potatoes or vegetables.

Notes

For extra flavor, marinate beef in stout and thyme for a few hours before cooking. Leftovers reheat well in the oven. Ensure the pastry edges are sealed to prevent leaking.
