- 2 lbs beef stew meat, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced

- 1 cup beef stock
- 1/2 cup stout beer (optional)
- 1 tsp dried thyme
- Salt and pepper, to taste
- 1 sheet puff pastry (enough to cover pie)
- 1 egg, beaten (for egg wash)

- Preheat oven to 400°F (200°C).
- Heat oil in a large skillet over medium-high heat. Brown beef in batches and set aside.
- Add onions, carrots, and celery to the skillet and cook until softened.
- Add garlic and cook 1 minute until fragrant.
- Sprinkle flour over the vegetables, stir to coat, and cook for 1–2 minutes.
- Gradually add beef stock and stout beer, stirring until thickened.
- Return beef to the skillet, add thyme, salt, and pepper. Simmer for 10–15 minutes until gravy thickens slightly.
- Transfer the beef and vegetable mixture to a pie dish. Cover with puff pastry, trimming excess and pressing edges to seal.
- Brush pastry with beaten egg.
- Bake for 25–30 minutes, or until pastry is golden brown and puffed.
- Serve hot with mashed potatoes or vegetables.
Notes
For extra flavor, marinate beef in stout and thyme for a few hours before cooking. Leftovers reheat well in the oven. Ensure the pastry edges are sealed to prevent leaking.
