- Sauté leeks: In a large pot, melt butter over medium heat. Add leeks, onion, and garlic. Cook 5–7 minutes until soft and fragrant.
- Add potatoes & broth: Stir in diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Blend: Use an immersion blender to puree the soup until smooth (or blend in batches for a creamier texture).
- Add cream: Stir in heavy cream or milk. Heat gently without boiling.
- Season & serve: Add salt and pepper to taste. Garnish with fresh herbs and serve warm.
Notes
For a lighter version, use milk instead of cream. You can leave some chunks for texture or fully blend for a silky soup. This soup can also be served chilled (Vichyssoise style).
