  • 3 large leeks (white and light green parts), sliced and cleaned
  • 3 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or milk
  • 2 tbsp butter or olive oil
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • Optional: fresh chives or parsley for garnish

  1. Sauté leeks: In a large pot, melt butter over medium heat. Add leeks, onion, and garlic. Cook 5–7 minutes until soft and fragrant.
  2. Add potatoes & broth: Stir in diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  3. Blend: Use an immersion blender to puree the soup until smooth (or blend in batches for a creamier texture).
  4. Add cream: Stir in heavy cream or milk. Heat gently without boiling.
  5. Season & serve: Add salt and pepper to taste. Garnish with fresh herbs and serve warm.

Notes

For a lighter version, use milk instead of cream. You can leave some chunks for texture or fully blend for a silky soup. This soup can also be served chilled (Vichyssoise style).
