  • 2 Earl Grey tea bags (contents only)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup fresh blackberries
  • Optional: powdered sugar or whipped cream for topping

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, salt, and Earl Grey tea leaves. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Alternately add dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients, until just combined.
  6. Gently fold in fresh blackberries.
  7. Spoon batter into prepared cupcake liners, filling about 2/3 full.
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Optionally, dust with powdered sugar or top with whipped cream before serving.

Notes

Use fresh blackberries for the best flavor. Be gentle when folding in berries to avoid breaking them and turning the batter purple.
