- 2 tbsp olive oil

- 2 tbsp honey
- 1 tbsp balsamic vinegar
- Salt and pepper, to taste

- Heat olive oil in a skillet over medium heat and sear chicken until golden, about 5–6 minutes per side. Remove and set aside.
- In the same pan, sauté garlic until fragrant.
- Add blueberries, thyme, chicken broth, honey, and balsamic vinegar. Simmer until the sauce thickens slightly.
- Return chicken to the pan and spoon sauce over it.
- Cook for another 5–7 minutes until chicken is fully cooked.
- Serve warm with extra sauce on top.
Notes
For extra richness, add a small knob of butter at the end. This pairs well with rice, mashed potatoes, or roasted vegetables.
