  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen blueberries
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 1/4 cup chicken broth
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • Salt and pepper, to taste

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat and sear chicken until golden, about 5–6 minutes per side. Remove and set aside.
  3. In the same pan, sauté garlic until fragrant.
  4. Add blueberries, thyme, chicken broth, honey, and balsamic vinegar. Simmer until the sauce thickens slightly.
  5. Return chicken to the pan and spoon sauce over it.
  6. Cook for another 5–7 minutes until chicken is fully cooked.
  7. Serve warm with extra sauce on top.

Notes

For extra richness, add a small knob of butter at the end. This pairs well with rice, mashed potatoes, or roasted vegetables.
