St. Patrick’s Day Buttercream Sugar Cookies are soft, classic sugar cookies topped with smooth, festive green buttercream frosting. Perfect for parties, gifting, or decorating fun shamrock shapes with family.

For the Sugar Cookies
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
For the Buttercream Frosting
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
- Green food coloring
- Sprinkles (optional)

- Preheat: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter & sugar: Beat butter and sugar until light and fluffy. Add egg and vanilla and mix well.
- Mix dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
- Combine: Gradually add dry ingredients to wet mixture until dough forms.
- Roll & cut: Roll dough to 1/4-inch thickness on a lightly floured surface. Cut into shamrock or round shapes.
- Bake: Place on baking sheet and bake for 8–10 minutes, until edges are lightly golden. Cool completely.
- Make frosting: Beat butter until creamy. Gradually mix in powdered sugar, milk, and vanilla until smooth. Add green food coloring.
- Decorate: Frost cooled cookies and top with sprinkles if desired.
Notes
Chill dough for 30 minutes if it becomes too soft to handle. Store frosted cookies in an airtight container for up to 4 days.
