  • 1 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup milk or half-and-half
  • 1/2 cup heavy cream
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 2 slices cooked bacon, crumbled (optional)
  • Green onions for garnish

  1. Sauté aromatics: Melt butter in a large pot over medium heat. Add onion and cook until soft. Stir in garlic and cook 30 seconds.
  2. Add potatoes: Stir in diced potatoes, Cajun seasoning, and smoked paprika.
  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer 12–15 minutes until potatoes are tender.
  4. Lightly mash some of the potatoes to thicken the soup.
  5. Stir in milk and heavy cream. Heat gently (do not boil).
  6. Add cheddar cheese and stir until melted and creamy.

Notes

For a spicier soup add extra Cajun seasoning or hot sauce. Substitute turkey bacon for a lighter version. Soup thickens as it sits — add broth when reheating if needed.
