- 4 cups potatoes, peeled and diced
- 1 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup milk or half-and-half
- 1/2 cup heavy cream
- 1 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/2 cup shredded cheddar cheese
- 2 slices cooked bacon, crumbled (optional)

- Sauté aromatics: Melt butter in a large pot over medium heat. Add onion and cook until soft. Stir in garlic and cook 30 seconds.

- Lightly mash some of the potatoes to thicken the soup.
- Stir in milk and heavy cream. Heat gently (do not boil).
- Add cheddar cheese and stir until melted and creamy.
- Season with salt and pepper to taste.
- Top with bacon and green onions before serving.
Notes
For a spicier soup add extra Cajun seasoning or hot sauce. Substitute turkey bacon for a lighter version. Soup thickens as it sits — add broth when reheating if needed.
