  • 2 cups crumbled carrot cake (homemade or store-bought)
  • 1/3 cup cream cheese frosting
  • 1 1/2 cups white chocolate chips or melting wafers
  • 1 tbsp coconut oil or shortening (optional for smoother coating)
  • 1/4 cup finely chopped walnuts or pecans (optional)
  • Optional: orange sprinkles or shredded coconut for garnish

  1. In a mixing bowl, combine crumbled carrot cake and cream cheese frosting until the mixture holds together.
  2. Roll mixture into small 1-inch balls and place them on a parchment-lined baking sheet.
  3. Refrigerate the balls for about 30 minutes to firm up.
  4. In a microwave-safe bowl, melt the white chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  5. Dip each chilled cake ball into the melted chocolate, coating completely.
  6. Place coated truffles back onto the parchment paper and immediately sprinkle with nuts or decorations if desired.
  7. Refrigerate for 15–20 minutes until the coating sets.
  8. Serve chilled or at room temperature.

Notes

Store truffles in an airtight container in the refrigerator for up to 5 days. You can also freeze them for up to 2 months. For extra flavor, add a pinch of cinnamon or nutmeg to the cake mixture.
