  • 1 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb (450g) carrots, peeled and sliced
  • 4 cups (1 L) vegetable or chicken broth
  • 1 tsp ground ginger (optional)
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 1/2 cup (120ml) heavy cream or coconut milk (optional for creaminess)
  • Fresh herbs for garnish (parsley, chives, or thyme)

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until soft and fragrant.
  2. Add carrots & broth: Stir in carrots, then pour in the broth. Bring to a boil, then reduce heat and simmer 20–25 minutes until carrots are tender.
  3. Blend soup: Use an immersion blender or regular blender to puree the soup until smooth.
  4. Add seasoning & cream: Stir in ginger (if using), salt, pepper, and cream or coconut milk. Heat gently until warmed through.
  5. Serve: Ladle into bowls and garnish with fresh herbs.

Notes

For extra flavor, roast the carrots and onions before adding the broth. You can also add a pinch of nutmeg or curry powder for a unique twist.
