- Add chicken sausage and vegetables to a large baking sheet.
- Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, smoked paprika, salt, and pepper.
- Toss until everything is evenly coated.
- Spread into an even layer.
- Roast for 25–30 minutes, stirring halfway, until vegetables are tender and lightly caramelized.
- Remove from oven and garnish with fresh herbs if desired.
