- 1 cup frozen peas and carrots

- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups orzo pasta
- 1/2 cup shredded cheddar or Gruyère cheese (optional)

- Stir in flour to create a roux and cook 1–2 minutes.
- Slowly whisk in chicken broth and milk. Bring to a simmer until thickened.
- Add shredded chicken, peas and carrots, thyme, salt, and pepper. Stir to combine.
- Stir in orzo pasta and cook 8–10 minutes until tender.
- Optional: Stir in cheese until melted and creamy.
- Serve warm, garnished with parsley if desired.
Notes
Use leftover rotisserie chicken for convenience. Substitute half-and-half for milk for a richer sauce. Add mushrooms or celery for extra flavor and texture.
