  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups orzo pasta
  • 1/2 cup shredded cheddar or Gruyère cheese (optional)

  1. In a large skillet, melt butter over medium heat. Add onion and garlic, cooking until soft, about 3–4 minutes.
  2. Stir in flour to create a roux and cook 1–2 minutes.
  3. Slowly whisk in chicken broth and milk. Bring to a simmer until thickened.
  4. Add shredded chicken, peas and carrots, thyme, salt, and pepper. Stir to combine.
  5. Stir in orzo pasta and cook 8–10 minutes until tender.
  6. Optional: Stir in cheese until melted and creamy.
  7. Serve warm, garnished with parsley if desired.

Notes

Use leftover rotisserie chicken for convenience. Substitute half-and-half for milk for a richer sauce. Add mushrooms or celery for extra flavor and texture.
