  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1/2 cup milk or cream
  • 1 tsp thyme (fresh or dried)
  • Salt and black pepper, to taste
  • 1 cup orzo pasta
  • Optional: fresh parsley for garnish

  1. Melt butter in a large skillet or pot over medium heat. Sauté onions and garlic until soft.
  2. Add carrots and cook 3–5 minutes until slightly tender.
  3. Stir in flour and cook 1–2 minutes to remove raw taste.
  4. Gradually add chicken broth and milk, whisking constantly to avoid lumps.
  5. Add thyme, salt, and pepper. Bring to a gentle simmer.
  6. Stir in orzo and cook until tender, about 8–10 minutes.
  7. Add cooked chicken and peas, stirring until heated through.
  8. Garnish with parsley and serve warm.

Notes

For a richer flavor, use half-and-half instead of milk. You can also top with puff pastry or biscuit dough for a traditional pot pie twist.
