  • 1 lb (450 g) chicken breast, cut into strips or bite-sized pieces
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup panko breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • Oil for frying
  • Optional dipping sauce:
  • Sweet chili sauce or honey mustard

  1. Prepare coating: Set up three bowls—one with flour, one with beaten eggs, and one with coconut, panko, salt, pepper, and paprika mixed together.
  2. Coat chicken: Dip each chicken piece into flour, then egg, then coconut mixture, pressing to adhere.
  3. Cook: Heat oil in a skillet over medium heat. Fry chicken pieces for 3–4 minutes per side until golden brown and cooked through.
  4. Drain: Remove and place on paper towels to drain excess oil.
  5. Serve: Serve warm with your favorite dipping sauce.

Notes

For a lighter version, bake at 200°C (400°F) for 20–25 minutes or air fry at 180°C (360°F) for 12–15 minutes. Flip halfway for even crispiness.
