This Cozy Garlic Parmesan Crockpot Chicken & Potatoes is a comforting one-pot meal. Tender chicken breasts, seasoned potatoes, and a creamy garlic-parmesan sauce cook slowly to perfection for an easy, flavorful dinner.

  • 4 boneless, skinless chicken breasts
  • 4 cups baby potatoes, halved
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1/2 cup chicken broth
  • Fresh parsley, chopped (for garnish)

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add halved baby potatoes around the chicken.
  3. In a bowl, mix melted butter, garlic, Parmesan cheese, thyme, paprika, salt, and pepper.
  4. Pour the garlic-parmesan mixture over the chicken and potatoes.
  5. Pour chicken broth into the slow cooker to keep everything moist.
  6. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours until chicken is cooked through and potatoes are tender.
  7. Garnish with fresh parsley before serving and enjoy warm.

Notes

For extra flavor, sprinkle more Parmesan cheese on top before serving. You can also add carrots or broccoli for a complete meal.
