- Add diced potatoes and stock. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Use an immersion blender to puree soup until smooth, or leave slightly chunky if preferred.
- Stir in heavy cream and season with salt and pepper. Heat through without boiling.
- Serve hot, garnished with chopped chives or parsley and optional bacon bits.
Notes
For extra flavor, add a pinch of nutmeg or smoked paprika. You can substitute half-and-half for heavy cream for a lighter version. Soup can be stored in the refrigerator for up to 3 days.
