  • 4 medium potatoes, peeled and diced
  • 2 leeks, cleaned and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable stock
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • Salt and pepper, to taste
  • Chopped chives or parsley for garnish
  • Optional: cooked bacon bits for topping

  2. Add diced potatoes and stock. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  3. Use an immersion blender to puree soup until smooth, or leave slightly chunky if preferred.
  4. Stir in heavy cream and season with salt and pepper. Heat through without boiling.
  5. Serve hot, garnished with chopped chives or parsley and optional bacon bits.

Notes

For extra flavor, add a pinch of nutmeg or smoked paprika. You can substitute half-and-half for heavy cream for a lighter version. Soup can be stored in the refrigerator for up to 3 days.
