- Sauté aromatics: Heat olive oil in a pot over medium heat. Add onion and cook until soft, about 3–4 minutes. Add garlic and cook for 1 minute.
- Add artichokes: Stir in chopped artichoke hearts and cook for 2–3 minutes.
- Add broth: Pour in broth and bring to a simmer. Cook for 10 minutes.
- Blend (optional): For a smoother texture, partially blend the soup.
- Add cream: Stir in heavy cream and Parmesan cheese until melted.
- Add greens & lemon: Add spinach, lemon juice, zest, and oregano. Simmer for 2–3 minutes.
- Season: Add salt and pepper to taste.
- Serve: Serve warm with extra Parmesan on top.
Notes
For a lighter version, substitute half-and-half for heavy cream. Add cooked chicken for extra protein. Adjust lemon to taste for more brightness.
