Ingredients
Ingredients
- 6–8 medium potatoes, peeled and diced
- 8 oz (225g) Irish bacon, diced
- 1 medium onion, diced
- 2 tbsp butter or olive oil
- Salt and black pepper, to taste
- 2–3 green onions, sliced (optional, for garnish)
- Fresh parsley, chopped (optional, for garnish)
Instructions
Instructions
- Prep potatoes: Parboil diced potatoes in salted water for 5–7 minutes until slightly tender. Drain and set aside.
- Cook bacon: Heat a large skillet over medium heat. Add diced Irish bacon and cook until crisp. Remove bacon and set aside, leaving some fat in the skillet.
- Sauté onions: Add butter or olive oil to the skillet if needed. Sauté diced onion until soft and translucent, about 3–4 minutes.
- Cook potatoes: Add parboiled potatoes to the skillet. Cook, stirring occasionally, until golden and crispy on all sides, about 10–12 minutes.
- Combine: Stir cooked bacon back into the skillet. Season with salt and pepper to taste.
- Serve: Garnish with green onions and parsley if desired. Serve hot for breakfast, brunch, or a comforting dinner side.
Notes
For extra flavor, add smoked paprika or garlic powder to the potatoes while cooking. You can also toss in diced bell peppers for color. Leftovers keep well in the fridge for 1–2 days and can be reheated in a skillet for crispiness.
