- 10 rice paper wrappers
- 1 cup shredded cabbage
- 1/2 cup grated carrots
- 1/2 cup cooked vermicelli noodles (optional)
- 1/2 cup mushrooms, finely chopped
- 2 green onions, sliced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp garlic, minced
- Oil for frying (or brushing for air fryer)

- In a pan, sauté garlic and mushrooms until soft. Add cabbage, carrots, and green onions.
- Stir in soy sauce and sesame oil, then cook for 2–3 minutes. Let filling cool.
- Dip rice paper briefly in warm water to soften.
- Place filling in the center and roll tightly like a spring roll.
- Repeat with remaining wrappers and filling.
- Heat oil in a pan and fry rolls until golden and crispy, or air fry at 190°C (375°F) for 10–12 minutes.
- Serve hot with your favorite dipping sauce.
Notes
Do not over-soak rice paper or it may tear. For extra crispiness, double-wrap the rolls. Try serving with sweet chili or peanut sauce.
