  • 4 medium potatoes, peeled and diced

  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp dried rosemary
  • 2 tbsp tomato paste
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Optional: 1 cup frozen peas or green beans, added last 30 minutes

  1. Place beef, potatoes, carrots, celery, onion, garlic, and tomato paste in the slow cooker.
  2. Pour beef broth over the ingredients and sprinkle with salt, pepper, thyme, paprika, and rosemary.
  3. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef and vegetables are tender.
  4. Optional: stir in frozen peas or green beans 30 minutes before serving.
  5. For thicker stew, stir in cornstarch slurry 15–20 minutes before serving.
  6. Serve hot with crusty bread or over rice for a comforting meal.

Notes

This stew freezes well for easy future meals. You can add parsnips, turnips, or mushrooms for extra flavor.
