  • 6 cups diced russet potatoes (peeled or unpeeled)
  • 1 small onion, diced
  • 3 cups chicken broth
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup cooked turkey bacon or beef bacon, crumbled
  • Optional garnish: green onions or extra cheese

  1. Spray the inside of a 6-quart crock pot with cooking spray.
  2. Add diced potatoes, onion, chicken broth, cream of chicken soup, garlic powder, and black pepper. Stir to combine.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are very tender.
  4. Use a potato masher or immersion blender to mash soup to desired consistency.
  5. Stir in shredded cheddar cheese, sour cream, and crumbled turkey or beef bacon.
  6. Cover and cook an additional 15–20 minutes until cheese is melted and soup is creamy.
  7. Serve hot with optional garnishes.

Notes

For a thicker soup, mash more of the potatoes. Add a splash of milk or cream if you prefer a thinner consistency. Leftovers keep well in the fridge for up to 3 days.
