- 6 cups diced russet potatoes (peeled or unpeeled)
- 1 small onion, diced
- 3 cups chicken broth
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup cooked turkey bacon or beef bacon, crumbled
- Optional garnish: green onions or extra cheese

- Spray the inside of a 6-quart crock pot with cooking spray.
- Add diced potatoes, onion, chicken broth, cream of chicken soup, garlic powder, and black pepper. Stir to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are very tender.
- Use a potato masher or immersion blender to mash soup to desired consistency.
- Stir in shredded cheddar cheese, sour cream, and crumbled turkey or beef bacon.
- Cover and cook an additional 15–20 minutes until cheese is melted and soup is creamy.
- Serve hot with optional garnishes.
Notes
For a thicker soup, mash more of the potatoes. Add a splash of milk or cream if you prefer a thinner consistency. Leftovers keep well in the fridge for up to 3 days.
