  • 2 lbs russet potatoes, peeled and diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 packet (1 oz) ranch seasoning mix
  • 1 tsp black pepper
  • 1 cup heavy cream
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 2 tbsp butter
  • Optional: green onions for garnish

Instructions

  1. Add diced potatoes, onion, garlic, chicken broth, ranch seasoning, and black pepper to the crock pot.
  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
  3. Use a potato masher or immersion blender to slightly mash the soup for a creamy texture.
  4. Stir in butter, heavy cream, sour cream, cheddar cheese, and crumbled bacon.
  5. Cover and cook an additional 20–30 minutes until cheese is melted and soup is creamy.
  6. Serve hot, garnished with extra cheese, bacon, and green onions if desired.

Notes

For an even thicker soup, mash more of the potatoes or add a cornstarch slurry. This soup is rich and filling—perfect with crusty bread.
