- Stir in butter, heavy cream, sour cream, cheddar cheese, and crumbled bacon.
- Cover and cook an additional 20–30 minutes until cheese is melted and soup is creamy.
- Serve hot, garnished with extra cheese, bacon, and green onions if desired.
Notes
For an even thicker soup, mash more of the potatoes or add a cornstarch slurry. This soup is rich and filling—perfect with crusty bread.
