- 2 lbs beef stew meat, cut into chunks
- 4 medium potatoes, diced

- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 tsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 bay leaf
- 2 tbsp flour or cornstarch (optional, for thickening)

- Place beef, potatoes, carrots, celery, onion, and garlic in the slow cooker.
- Add beef broth, diced tomatoes, Worcestershire sauce, thyme, paprika, salt, pepper, and bay leaf. Stir gently.
- Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until beef and vegetables are tender.
- If you prefer a thicker stew, mix flour or cornstarch with a small amount of water and stir into the stew during the last 20–30 minutes of cooking.
- Remove bay leaf and serve hot.
Notes
This stew freezes well and can be reheated for a quick meal. Add peas or green beans during the last 30 minutes for extra veggies.
