  • 2 lbs beef stew meat, cut into chunks
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Worcestershire sauce
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 bay leaf
  • 2 tbsp flour or cornstarch (optional, for thickening)

  1. Place beef, potatoes, carrots, celery, onion, and garlic in the slow cooker.
  2. Add beef broth, diced tomatoes, Worcestershire sauce, thyme, paprika, salt, pepper, and bay leaf. Stir gently.
  3. Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until beef and vegetables are tender.
  4. If you prefer a thicker stew, mix flour or cornstarch with a small amount of water and stir into the stew during the last 20–30 minutes of cooking.
  5. Remove bay leaf and serve hot.

Notes

This stew freezes well and can be reheated for a quick meal. Add peas or green beans during the last 30 minutes for extra veggies.
