  • 2 lbs beef stew meat, cubed
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Optional: 1 cup frozen peas, added in last 30 minutes

  1. Place beef, potatoes, carrots, celery, onion, and garlic in the slow cooker.
  2. Pour beef broth over the ingredients.
  3. Sprinkle salt, pepper, paprika, thyme, and rosemary over the top.
  4. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef and vegetables are tender.
  5. If using, stir in frozen peas 30 minutes before serving.
  6. Serve hot with crusty bread or over rice for a complete meal.

Notes

This is a flexible “dump-and-go” recipe — you can add other vegetables like green beans or parsnips. For thicker stew, mash a few potatoes or add a cornstarch slurry at the end.
