- 1 lb kielbasa, sliced into 1/2-inch pieces
- 4 cups diced potatoes (peeled or unpeeled)
- 1 small onion, chopped
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar cheese, divided
- 1/4 tsp garlic powder
- Salt and pepper, to taste
- Optional: chopped green onions for garnish

- Spray the inside of a 6-quart crockpot with cooking spray.
- In a large bowl, mix cream of mushroom soup, sour cream, garlic powder, salt, and pepper.
- Add diced potatoes, chopped onion, and sliced kielbasa to the crockpot. Pour the soup mixture over the top and stir gently to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
- About 15 minutes before serving, sprinkle 1 cup of cheddar cheese over the top, cover, and let melt.
- Sprinkle remaining cheese on top before serving, and garnish with chopped green onions if desired.
Notes
For extra flavor, sauté the onions with the kielbasa before adding to the crockpot. You can also add bell peppers or mushrooms for additional veggies.
