  • 1 lb kielbasa, sliced into 1/2-inch pieces
  • 45 medium potatoes, diced or thinly sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup milk
  • Salt and pepper, to taste
  • Optional: chopped parsley for garnish

  1. Spray the crockpot with cooking spray.
  2. In the crockpot, layer potatoes, onions, garlic, and sliced kielbasa.
  3. In a bowl, mix cream of mushroom soup, sour cream, milk, 1 cup of cheddar cheese, salt, and pepper. Pour evenly over the potatoes and kielbasa.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
  5. Sprinkle remaining cheddar cheese on top 10–15 minutes before serving, cover to melt.
  6. Garnish with parsley and serve warm.

Notes

For extra flavor, use smoked or spicy kielbasa. Thinly slice potatoes for even cooking.
