- 1 lb kielbasa, sliced into 1/2-inch pieces
- 4–5 medium potatoes, diced or thinly sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 cup milk
- Salt and pepper, to taste
- Optional: chopped parsley for garnish

- Spray the crockpot with cooking spray.
- In the crockpot, layer potatoes, onions, garlic, and sliced kielbasa.
- In a bowl, mix cream of mushroom soup, sour cream, milk, 1 cup of cheddar cheese, salt, and pepper. Pour evenly over the potatoes and kielbasa.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
- Sprinkle remaining cheddar cheese on top 10–15 minutes before serving, cover to melt.
- Garnish with parsley and serve warm.
Notes
For extra flavor, use smoked or spicy kielbasa. Thinly slice potatoes for even cooking.
