- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp dried thyme

- 1/2 tsp salt
- 2 tbsp all-purpose flour (optional, for thicker gravy)
- Fresh parsley, chopped (for garnish)

- Place chicken in the slow cooker. Add diced onion and garlic.
- In a bowl, whisk together chicken broth, cream of chicken soup, thyme, salt, and pepper. Pour over chicken.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours until chicken is cooked through and tender.
- Optional: To thicken the gravy, remove chicken and whisk 2 tbsp flour into the liquid. Cook on HIGH for an additional 15–20 minutes.
- Serve chicken with gravy spooned over the top. Garnish with fresh parsley and serve with mashed potatoes, rice, or noodles.
Notes
For extra flavor, add sliced mushrooms or carrots to the slow cooker. Leftover gravy can be refrigerated and used later for other dishes.
