- 2 boneless, skinless chicken breasts
- 3 cups frozen or canned corn
- 2 cups diced potatoes (Yukon gold or russet)
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup milk
- 1/2 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 2 tbsp butter
- Optional: shredded cheddar cheese, bacon, green onions

- Add chicken breasts to the bottom of the crockpot.
- Top with corn, potatoes, onion, and garlic.
- Pour in chicken broth and season with thyme, smoked paprika, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken, shred with two forks, and return to the crockpot.
- Stir in butter, milk, and heavy cream.
- Cover and cook an additional 20–30 minutes until creamy and heated through.
- Serve warm with desired toppings.
Notes
For a thicker chowder, mash some of the potatoes before serving or add a cornstarch slurry. This soup is great for meal prep and freezes well.
