- 1 lb boneless, skinless chicken breasts
- 1 package (9 oz) refrigerated cheese tortellini
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese (optional, for topping)
- Fresh parsley, chopped (optional, for garnish)

- Spray a 6-quart crockpot with cooking spray.
- Place chicken breasts in the crockpot and season with salt, pepper, and Italian seasoning.
- In a bowl, mix cream of chicken soup, chicken broth, Parmesan cheese, and minced garlic. Pour over chicken.
- Cover and cook on LOW for 3–4 hours or HIGH for 1.5–2 hours, until chicken is cooked through.
- Remove chicken and shred with two forks. Return shredded chicken to the crockpot.
- Add tortellini and stir gently. Cover and cook on HIGH for 10–12 minutes, until tortellini are tender.
- Sprinkle shredded mozzarella cheese over the top if desired, cover, and cook an additional 5 minutes until melted.
- Garnish with chopped parsley and serve warm.
Notes
Do not overcook tortellini to prevent it from becoming mushy. You can add spinach or peas for extra veggies. Leftovers store well in the fridge for up to 3 days.
