- 1 can (15 oz) black beans, drained and rinsed

- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) Rotel tomatoes with green chilies
- 4 cups chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime

- Add chicken breasts to the slow cooker.
- Top with onion, garlic, black beans, corn, diced tomatoes, Rotel, and chicken broth.
- Season with cumin, chili powder, paprika, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Stir in lime juice and adjust seasoning if needed.
- Serve hot with your favorite toppings.
Notes
For a creamier soup, stir in 1/2 cup heavy cream or cream cheese at the end. This soup freezes well and tastes even better the next day.
