  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can Rotel diced tomatoes with green chilies
  • 1 (15 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional toppings: tortilla strips, shredded cheese, sour cream, avocado, cilantro

  1. Add chicken breasts to the slow cooker.
  2. Top with onion, garlic, black beans, corn, Rotel, crushed tomatoes, and chicken broth.
  3. Season with chili powder, cumin, paprika, salt, and pepper.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Remove chicken, shred with two forks, and return to the slow cooker.
  6. Stir well and serve hot with your favorite toppings.

Notes

For extra heat, add cayenne pepper or hot Rotel. This soup freezes well and tastes even better the next day. You can also add a splash of lime juice before serving for extra brightness.
