Crockpot Hamburger Potato Casserole is a comforting, one-pot meal with ground beef, potatoes, cheese, and creamy sauce cooked low and slow in the crockpot. Perfect for busy weeknights or family dinners.

- 1 lb ground beef
- 4 cups peeled and diced potatoes
- 1 small onion, chopped
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese, divided
- 1 tsp garlic powder
- Salt and pepper, to taste
- Optional: chopped parsley for garnish

- Spray the inside of a 6-quart crockpot with cooking spray.
- In a skillet over medium heat, brown the ground beef with chopped onion. Drain excess fat.
- In a large bowl, mix cream of mushroom soup, sour cream, garlic powder, salt, and pepper.
- Add browned beef mixture and diced potatoes to the crockpot. Pour the soup mixture over the top and stir to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
- About 15 minutes before serving, sprinkle shredded cheddar cheese over the top, cover, and let melt.
- Garnish with chopped parsley if desired and serve warm.
Notes
For a richer flavor, add 1/4 cup milk or heavy cream to the soup mixture. You can also mix in chopped bell peppers or mushrooms for extra veggies.
