A cozy, easy crockpot casserole with seasoned ground beef, tender potatoes, and a cheesy sauce — perfect for a filling weeknight dinner.
Ingredients
Ingredients
- 1 lb ground beef
- 4–5 medium potatoes, thinly sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese, divided
- 1 tsp paprika
- Salt and pepper, to taste
- Optional: chopped parsley for garnish
Instructions
Instructions
- Brown the ground beef with onion and garlic in a skillet. Drain excess fat.
- In a bowl, mix cream of mushroom soup, milk, paprika, salt, and pepper.
- Layer half of the sliced potatoes in the bottom of the crockpot. Top with half of the cooked beef mixture and half of the cheddar cheese.
- Repeat layers with remaining potatoes, beef, and cheese. Pour soup mixture evenly over the top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
- Optional: sprinkle extra cheese on top 15 minutes before serving for a melty finish.
- Garnish with chopped parsley and serve warm.
Notes
You can swap cream of mushroom soup with cream of chicken or celery for a slightly different flavor. Thinly slicing potatoes ensures even cooking.
