- 4 large bell peppers, tops cut off and seeds removed
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded mozzarella or cheddar cheese (optional)
- Fresh parsley, chopped (for garnish)

- In a skillet over medium heat, cook ground beef with diced onion and garlic until browned. Drain excess fat.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Stuff each bell pepper with the beef and rice mixture.
- Place stuffed peppers upright in the slow cooker.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours until peppers are tender.
- About 15 minutes before serving, sprinkle shredded cheese on top and cover to melt.
- Garnish with chopped fresh parsley before serving.
Notes
You can swap the meat for cooked quinoa or lentils for a vegetarian version. Serve with tomato sauce or sour cream for extra flavor.
