- 6 bell peppers (any color), tops removed and seeds cleaned
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes, drained
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded mozzarella or cheddar cheese
- Optional: fresh parsley for garnish

- In a skillet, brown ground beef with diced onion and garlic until fully cooked; drain excess grease.
- Stir in cooked rice, diced tomatoes, Italian seasoning, paprika, salt, and pepper.
- Fill each bell pepper with the beef and rice mixture.
- Pour tomato sauce into the bottom of the slow cooker.
- Place stuffed peppers upright in the slow cooker.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until peppers are tender.
- Sprinkle cheese on top during the last 20 minutes of cooking.
- Optional: garnish with fresh parsley before serving.
Notes
You can swap ground beef for ground turkey or chicken. For a low-carb option, substitute rice with cauliflower rice. Leftovers reheat well and are great for meal prep.
