- 2 lbs lamb shoulder, cut into chunks
- Salt and black pepper to taste
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef or lamb broth
- 3 large carrots, sliced
- 4 medium potatoes, cubed
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
- 2 tbsp fresh parsley, chopped (for garnish)

- Season & coat: Season lamb with salt and pepper. Toss with flour to lightly coat.
- Brown lamb: Heat olive oil in a large Dutch oven over medium-high heat. Brown lamb in batches, then remove and set aside.
- Sauté aromatics: In the same pot, add onion and cook until softened. Stir in garlic and cook 30 seconds.
- Build the stew: Stir in tomato paste. Return lamb to the pot and pour in broth. Add thyme and bay leaves.
- Simmer: Bring to a boil, reduce heat, cover, and simmer for 1 hour.
- Add vegetables: Add carrots and potatoes. Cover and simmer an additional 30–40 minutes until vegetables are tender and lamb is fork-tender.
- Finish: Remove bay leaves. Adjust seasoning and garnish with fresh parsley before serving.
Notes
For deeper flavor, substitute 1 cup of broth with stout beer. The stew tastes even better the next day as flavors continue to develop. Serve with crusty bread or Irish soda bread.
