- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 cups baby potatoes, halved
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

- Heat olive oil in a skillet and sear beef until browned.
- Add onion, garlic, carrots, and potatoes to the crockpot.
- Place browned beef on top of vegetables.
- Whisk beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf.
- Pour mixture over the beef.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours.
- Optional: Stir in cornstarch slurry during the last 30 minutes to thicken.
- Remove bay leaf before serving.
