Description

Dublin Coddle is a traditional Irish stew made with sausages, bacon, and potatoes, slowly cooked together to create a hearty, comforting dish. Perfect for chilly evenings or a taste of Ireland at home.

  • 46 Irish sausages (or pork sausages)
  • 4 slices of bacon, chopped
  • 1 large onion, sliced
  • 4 medium potatoes, peeled and sliced
  • 2 carrots, sliced
  • 2 cups chicken or vegetable stock
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

  1. Preheat oven to 350°F (175°C).
  2. In a large ovenproof pot or casserole, fry bacon until crispy. Remove and set aside.
  3. Brown sausages in the same pot, then remove and set aside.
  4. In the same pot, sauté onions and carrots until softened.
  5. Layer half of the sliced potatoes, then add sausages, bacon, onions, and remaining potatoes.
  6. Pour stock over the layers and sprinkle with thyme, salt, and pepper.
  7. Cover and bake in the oven for 1–1.5 hours until potatoes are tender and flavors meld.
  8. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use a mix of smoked and regular bacon. Leftovers taste even better the next day. Serve with crusty bread for a complete meal.
