- 4–6 Irish sausages (or pork sausages)
- 4 slices of bacon, chopped
- 1 large onion, sliced
- 4 medium potatoes, peeled and sliced
- 2 carrots, sliced
- 2 cups chicken or vegetable stock
- 1 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley for garnish

- Preheat oven to 350°F (175°C).
- In a large ovenproof pot or casserole, fry bacon until crispy. Remove and set aside.
- Brown sausages in the same pot, then remove and set aside.
- In the same pot, sauté onions and carrots until softened.
- Layer half of the sliced potatoes, then add sausages, bacon, onions, and remaining potatoes.
- Pour stock over the layers and sprinkle with thyme, salt, and pepper.
- Cover and bake in the oven for 1–1.5 hours until potatoes are tender and flavors meld.
- Garnish with fresh parsley before serving.
Notes
For a richer flavor, use a mix of smoked and regular bacon. Leftovers taste even better the next day. Serve with crusty bread for a complete meal.
