Description

  • 1 lb pork sausages (cut into large pieces)
  • 6 slices thick-cut bacon, chopped
  • 1 large onion, sliced
  • 45 medium potatoes, thickly sliced
  • 2 cups chicken broth
  • 1 cup water
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

  1. Brown meats: In a large Dutch oven, cook bacon over medium heat until lightly crisp. Remove and set aside. Brown sausages on all sides, then remove.
  2. Layer ingredients: In the same pot, layer half the potatoes, onions, garlic, bacon, and sausages. Repeat layers with remaining ingredients.
  3. Add liquid: Pour in chicken broth and water. Add thyme and bay leaf. Season lightly with salt and pepper.
  4. Simmer gently: Bring to a light simmer, cover, and cook on low heat for 1–1½ hours until potatoes are tender and flavors have melded.
  5. Finish: Remove bay leaf, adjust seasoning, and garnish with fresh parsley before serving.

Notes

For deeper flavor, substitute part of the broth with stout beer. This dish is traditionally not heavily browned, as it is meant to gently “coddle” or simmer. Serve with crusty bread or Irish soda bread.
