  • 4 boneless, skinless chicken breasts or thighs
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey or brown sugar
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated or ground
  • 1/2 tsp black pepper
  • 2 tsp cornstarch mixed with 2 tsp water (optional, for thickening)
  • Optional: sesame seeds and sliced green onions for garnish

  1. Place chicken in the crockpot.
  2. In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, ginger, and pepper.
  3. Pour sauce over chicken. Cover and cook on low for 4–5 hours or high for 2–3 hours until chicken is cooked through.
  4. Optional: For a thicker sauce, remove chicken and stir in cornstarch mixture. Cook on high 5–10 minutes until thickened, then return chicken to the sauce.
  5. Garnish with sesame seeds and green onions. Serve over rice or noodles.

Notes

You can also use frozen chicken breasts — no need to thaw. Adjust sweetness and saltiness to taste.
