- 3–4 lb beef chuck roast
- 2 tbsp olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 4 large carrots, cut into chunks
- 4 celery stalks, cut into chunks
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tsp dried thyme
- 2 tsp dried rosemary
- Salt and black pepper, to taste
- 2 tbsp all-purpose flour (optional, for thickening)

- Preheat oven to 325°F (163°C).
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned.
- Remove roast and set aside. Add onion, garlic, carrots, and celery; sauté 3–4 minutes.
- Return roast to the pot. Add beef broth, red wine, thyme, rosemary, salt, and pepper.
- Cover and roast in the oven for 3–4 hours, or until beef is tender and easily shredded.
- Optional: Remove roast and vegetables, stir in flour to thicken the gravy on stovetop for 2–3 minutes.
- Slice or shred beef and serve with vegetables and gravy.
Notes
For extra flavor, add a few sprigs of fresh herbs or a splash of balsamic vinegar. Serve with mashed potatoes or crusty bread for a hearty meal.
