- 1 lb boneless, skinless chicken breasts, diced
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 2 cups broccoli florets (fresh or frozen)
- 1 1/2 cups shredded cheddar cheese
- Optional garnish: chopped parsley

- Spray the inside of a 6-quart crockpot with cooking spray.
- Add diced chicken, uncooked rice, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir to combine.
- Cover and cook on LOW for 3–4 hours or HIGH for 2–3 hours, until rice is tender and chicken is cooked through.
- Stir in broccoli florets and shredded cheddar cheese.
- Cover and cook an additional 20–30 minutes, until broccoli is tender and cheese is melted.
- Stir well and serve warm.
Notes
For best results, avoid lifting the lid while rice cooks. You can substitute brown rice, but cooking time will need to be increased. Leftovers store well in the fridge for up to 3 days.
