- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 1 cup carrots, sliced
- 1 cup frozen peas
- 1 cup potatoes, diced
- 1/2 cup celery, sliced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk or half-and-half
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper, to taste
- Optional: 1 sheet puff pastry or biscuit dough for topping

- Place chicken, carrots, peas, potatoes, celery, and onion in the crockpot.
- In a separate bowl, whisk together flour, chicken broth, milk, thyme, parsley, salt, and pepper until smooth. Pour over the chicken and vegetables.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until chicken is cooked and vegetables are tender.
- If using puff pastry or biscuit dough, add it during the last 30–40 minutes of cooking, covering the top. Or bake separately in the oven according to package instructions.
- Stir gently before serving. Serve hot, optionally with extra crust on top.
Notes
For a gluten-free version, use GF flour or cornstarch. You can also add corn, green beans, or other vegetables for variety. Leftovers store well in the fridge for up to 3 days.
