- Cook beef: In the same skillet, cook ground beef until browned. Drain excess fat. Stir in garlic powder, onion powder, paprika, salt, and pepper.
- Make slaw: In a small bowl, mix sour cream, Dijon mustard, apple cider vinegar, and a pinch of salt. Toss with shredded cabbage.
- Warm tortillas: Heat tortillas in a dry skillet or microwave until soft and pliable.
- Assemble tacos: Fill tortillas with seasoned beef, crispy potatoes, and cabbage slaw. Sprinkle with fresh parsley and serve.
Notes
For extra flavor, add shredded Irish cheddar on top or a drizzle of garlic aioli. Ground lamb can be substituted for beef for a more traditional Irish-inspired variation.
