  • 2 cups diced potatoes (small cubes)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 8 small flour or corn tortillas
  • 1 cup shredded green cabbage
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tbsp chopped fresh parsley

  1. Cook potatoes: Heat olive oil in a skillet over medium heat. Add diced potatoes, season with salt and pepper, and cook 10–12 minutes until golden and tender. Remove and set aside.
  2. Cook beef: In the same skillet, cook ground beef until browned. Drain excess fat. Stir in garlic powder, onion powder, paprika, salt, and pepper.
  3. Make slaw: In a small bowl, mix sour cream, Dijon mustard, apple cider vinegar, and a pinch of salt. Toss with shredded cabbage.
  4. Warm tortillas: Heat tortillas in a dry skillet or microwave until soft and pliable.
  5. Assemble tacos: Fill tortillas with seasoned beef, crispy potatoes, and cabbage slaw. Sprinkle with fresh parsley and serve.

Notes

For extra flavor, add shredded Irish cheddar on top or a drizzle of garlic aioli. Ground lamb can be substituted for beef for a more traditional Irish-inspired variation.
