  • 12 oz pasta (penne or rotini)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil for garnish (optional)

  1. In a large pot or deep skillet, heat olive oil over medium heat. Sauté onion until soft, 3–4 minutes. Add garlic and cook 30 seconds.
  2. Add diced tomatoes, pasta, broth, basil, salt, and pepper. Stir to combine.
  3. Bring to a boil, then reduce heat and simmer, uncovered, stirring occasionally, until pasta is cooked and most of the liquid is absorbed, about 12–15 minutes.
  4. Stir in heavy cream and Parmesan cheese (if using) until creamy and well combined.
  5. Serve hot, garnished with fresh basil if desired.

Notes

For extra flavor, add cooked chicken, sausage, or roasted vegetables. You can also swap heavy cream for coconut milk for a dairy-free version.
