- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil for garnish (optional)

- In a large pot or deep skillet, heat olive oil over medium heat. Sauté onion until soft, 3–4 minutes. Add garlic and cook 30 seconds.
- Add diced tomatoes, pasta, broth, basil, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat and simmer, uncovered, stirring occasionally, until pasta is cooked and most of the liquid is absorbed, about 12–15 minutes.
- Stir in heavy cream and Parmesan cheese (if using) until creamy and well combined.
- Serve hot, garnished with fresh basil if desired.
Notes
For extra flavor, add cooked chicken, sausage, or roasted vegetables. You can also swap heavy cream for coconut milk for a dairy-free version.
