- 1 lb ground beef or lamb
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 2 cups mashed potatoes (prepared)
- 1/2 cup shredded cheddar cheese (optional)
- 1 tbsp olive oil

- Preheat oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Cook ground beef until browned; drain excess fat.
- Add onion and cook until soft, 3–4 minutes. Add garlic and cook 1 minute.
- Stir in tomato paste, Worcestershire sauce, thyme, peas and carrots. Season with salt and pepper. Cook 3–5 minutes until vegetables are heated through.
- Transfer the beef mixture to a baking dish. Spread mashed potatoes evenly on top.
- Sprinkle cheddar cheese over the top if desired.
- Bake 20–25 minutes until the top is lightly golden and the casserole is heated through.
- Let cool 5 minutes before serving.
Notes
For extra flavor, add a pinch of smoked paprika to the beef mixture. Leftovers reheat well for next-day meals.
