  • 1 lb ground beef or lamb
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 cups mashed potatoes (prepared)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 tbsp olive oil

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Cook ground beef until browned; drain excess fat.
  3. Add onion and cook until soft, 3–4 minutes. Add garlic and cook 1 minute.
  4. Stir in tomato paste, Worcestershire sauce, thyme, peas and carrots. Season with salt and pepper. Cook 3–5 minutes until vegetables are heated through.
  5. Transfer the beef mixture to a baking dish. Spread mashed potatoes evenly on top.
  6. Sprinkle cheddar cheese over the top if desired.
  7. Bake 20–25 minutes until the top is lightly golden and the casserole is heated through.
  8. Let cool 5 minutes before serving.

Notes

For extra flavor, add a pinch of smoked paprika to the beef mixture. Leftovers reheat well for next-day meals.
