- 1 can (14 oz) diced tomatoes
- 5 cups vegetable broth
- 1/2 cup small pasta (like ditalini or orzo)
- 2 cups fresh spinach or kale
- 1 tsp dried Italian herbs
- Salt and black pepper, to taste
- Optional: grated Parmesan cheese for serving

- Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic and cook 2–3 minutes until fragrant.
- Add vegetables: Stir in carrots, zucchini, and green beans. Cook 3–5 minutes until slightly softened.
- Add broth & beans: Add diced tomatoes, white beans, broth, and Italian herbs. Bring to a boil, then reduce heat and simmer 15 minutes.
- Add pasta: Stir in pasta and cook 8–10 minutes until tender.
- Add greens: Stir in spinach or kale and cook until wilted.
- Season & serve: Add salt and pepper to taste. Serve with grated Parmesan if desired.
Notes
Customize with seasonal vegetables like peas or asparagus. For extra flavor, add a spoonful of pesto before serving.
